Albert Carrol Williams, 93, of Amarillo, TX passed away on Friday, September 23, 2022.

Carrol was born on March 17, 1929, in Shamrock, Texas to Albert Newton and Lila Beatrice (Clark) Williams. He grew up on a farm north of Pakan, TX.

He married Helen Mernice Carreker on her 20th birthday, October 21, 1950. He served in the Army during the Korean War. After leaving the Military, he and his family owned and operated The Shamrock Slaughter House. In the 1970’s, he owned and operated Carrol’s Smokehouse Bar-B-Q restaurant and The Kelly Motel.

After retirement, he and Helen enjoyed traveling and being work campers for KOA campgrounds.

Carrol was preceded in death by his parents; his wife, Helen; his brothers, Orsborn and JC; his sister, Dixie; and his daughter, Cynthia.

Survivors include his son, Danny Williams and wife Kim; grandson, Trebor Shaeffer and wife Rebecca; grandson, Michael Williams and wife Lauren; grandson, Ethan Williams; granddaughter, Lindsey Davidson and husband Devin; grandson, Garrett Williams and girlfriend Skyler Allen; five great-grandchildren, Austin Shaeffer, Cannon Williams, Lylah Williams, Izzy Williams, and Wyatt Davidson; and many beloved nieces and nephews.

Memorial services will be held on Saturday, October 8, 2022, at 11:00 a.m., at Westview Christian Church in Amarillo.

In lieu of flowers, the family would like memorials to be sent to BSA Hospice of the Southwest and Westview Christian Church in Amarillo.

  1. Carrol & Helen were such fun & so welcoming! They provided their wonderful BBQ for the rehearsal dinner at our wedding. They will be missed.

  2. Always my favorite uncle. Vacations in the 70’s were always the best. Seeing all the Shamrock relatives. Going to Carroll’s Barbque was fun since Uncle Carroll was so patient with kids in the restaurant. I don’t have anything but pleasant memories of this joyful gentleman.

  3. Carrol and Helen were both such special people. They had a joy about them while they served others, whether at the motel, or with good BBQ, while volunteering at or catering many a SHS event, or in heading to the mountains for the summer to take care of others there. Born on March 17th–it doesn’t get any greener than that. Prayers for you and your family, Danny, and Cynthia’s as well, for peace and comfort in knowing your parents were a blessing to so many.

  4. “Uncle Butch” as I lovingly called him processed meat for my family then joined my Dad in the Bar B Que business which he learned well and satisfied a lot of hungry people! He was a good friend and will be missed! Sweet memories! Gone but never forgotten!

  5. Carroll and Helen, were such a part of the Shamrock community and neighbors to our John Porter family. Caring, spiritual and love of family was the center of this wonderful man and his family. Dear love and sympathy sent to the Williams family.

  6. Carrol & Helen were dearest friends of many years. They traveled lots of miles with my husband, Cliff, & I & as Cliff would say of Carrol, “ He would do to ride the river with.” He will be missed.

  7. Carol was a fine man. He and Helen were kind and caring. I spent many weekends with their family on that hill that overlooked Shamrock. He was an excellent cook. He will be missed
